The Llopart does an extremely gentle press in a vertical basket press. Maximum permitted yields of must per weight of grapes is 66.66% - the Llopart family does not extract past 45-50%. The semi-unpressed grapes are sold off to a local cooperative. The must ferments in temperature-controlled stainless steel tanks and is aged sur lie for four months before being returned to the bottle. The secondary fermentation is carried out in the bottle in underground cellars. The wine is aged in the bottle on the lees following the secondary fermentation for a minimum of 20 months. The Llopart family hand riddles and disgorges their Gran Reservas and limited bottlings while the Brut Nature, Brut Rosé, and Brut Reserva are mechanically riddled and disgorged. A harmonious sparkling wine, with an elegant profile
of nectarine, white raspberry, and ginger notes, interwoven
with chalk, spice, and a hint of smoke. The mouthwatering
acidity is balanced out, with a fine mousse.
