An exciting new concept! The wine is a hybrid between a traditional sparkling wine and a Pét-Nat. The combined winemaking style has created a complexity of texture and creamy flavor that continues to develop with age. As a blend of Albarino and Pinot grigio, the wines were barrel-aged separately for 12 months. The Albarino offers high juicy acidity while the Pinot grigio is a softer wine that develops layers and texture as it ages. Together the two wines are a textural study of how far modern sparkling wine can go.
