Carl Ehrhard Old School Riesling 2021

Slow fermentation at 64°F lasts three weeks. Half of the must is fermented in stainless steel and the other half in neutral oak, both with indigenous yeasts. The halves then trade places from steel to wood and vice versa to age an additional 3-4 months. No wood flavors are imparted on the wine, but this traditional use of barrels helps to smooth it out.
