The grapes are hand-picked from the 48-year-old vineyards in the Bischofsberg “Kuhweg” and Berg Roseneck “Unterer Platz” locations. Grapes are destemmed and selected again. After 2 months of mash fermentation in the basket press, 18 months of storage on the fine yeast in a wooden barrel (2×1200 l). Bottled unfiltered to preserve all natural flavors.
