Casco Viejo Blanco Tequila

Made in Arandas, Jalisco, by Gran Dinastia (NOM 1610). Led by Maestra Tequilera Elena Camarena who uses single estate grown Blue Weber agave that is grown at 7,000 feet. Once harvested the pinas are cooked in a brick oven, crushed with a roller mill, and fermented in open air wooden tanks for 80-90 hours. Distilled twice using copper pot stills. The Reposado is then aged 2-3 months in new American white oak that has briefly held tequila to soften the tannins; filtered with paper and charcoal before bottling. This creates of friendly yet expressive, balancing the high floral notes Arandas is famous for - such as pink peppercorn and fresh sweet herbs - with delicate fruit and citrus zest.
