COS Extra Virgin Olive Oil

When we though about making our olive oil, we didn’t have to do anything but use the same principles for making our wines. Same respect for the land, the oils and the same passion with which we make our wines were applied to making our olive oil. We grow Tonda Iblea olives using the same agricultural techniques that we use to make our wines. For us, there is only one path that we can take. Olive oil, just like wine, is a question of culture and history and goes back to the ancient traditions of our ancestors. Our trees are ancient as well. Some are hundreds of years old. We have 18 hectares in the contrada of Piraino in the area around Chiaramonte Gulfi.
