The Bees Knees is my go to when I’m craving something sweet and tart, that has botanical depth. It’s a simple cocktail that relies on the quality of the spirit and the honey - but if you’re not a fan of Gin, try it with Bourbon (called a Gold Rush), or aged Tequila or Rum!

Our hot summer weather usually means that I’m reaching for something light and refreshing. But some days I want something richer and bolder - not as heavy as a classic Old Fashioned, but similar. That’s when I reach for a cask strength tequila and a simple honey syrup and stir up an Agave Old Fashioned. It’s bold and bright, and perfect for sipping on a summer night.

Last week Hennessy invited me to visit and participate in Tales of the Cocktail in New Orleans — it was an amazing (and hot!) several days! The cocktail I presented that was based on a sustainability challenge won the competition. To be able to share and learn from other bartenders and cocktail creators over the course of the week was invaluable — and they made sure we had time to explore the amazing food and beverage options that the city has to offer. Beignets and chicory coffee were a must. And I knew that I needed to have a Hurricane. There’s just something perfect about strolling down Bourbon Street with a sweet, fruity cocktail packed with rum in your hand. As soon as I landed in CVG I knew I needed to make one of my own!

Summer flavors are bursting right now! And every grocery or farmers market stop I make I’m stocking up on my favorite seasonal produce - and right now I can’t get enough Watermelon! It’s a cool, sweet, refreshing reprieve from our heat and humidity. And it pairs amazingly well with Rum, Vodka, and, of course, Tequila!

I’ve been seeing all over social media that the drink of the summer is the Sarti Spritz - which is fantastic, if you’re in Italy or one of the very few US cities that have access to Sarti Rosa. This enticing blend of Passion Fruit, Mango, and Blood Orange has been calling to me. So I decided that if I can’t be sipping one in the Italian Riviera, I could bring a taste of the Riviera to NKY by making my own Sorta-Sarti Liqueur.
In a large pitcher combine Vodka, Mango, Passion Fruit, and Blood Orange Juice. Let sit in the fridge for 48 hours. Add Simple Syrup and Hibiscus, return to fridge and let infuse for 8 hours. Pour through a fine mesh strainer. Store in Fridge until ready to use.
This homemade Liqueur takes a few days to come together - but it’s well worth the wait! It is a fantastic blend of tropical flavors and becomes a sweet, tart, refreshing addition to the summer cocktail lineup.

This 4th of July weekend will have a lot of us hosting guests - some planned and others dropping in unexpectedly. I love making my syrups and juices from scratch, but sometimes you have to work with what you have at the moment. I love looking to pantry staples to shake up something that is crowd pleasing and delicious! I always have a few jars of jam and salsa on the shelf, and since the summer weather is upon us I’ve been loving anything and everything tequila. I grabbed the salsa, some fresh basil, a splash of Nixta Corn Liqueur and a healthy glug of Senorita Mexicana Blanco Tequila to shake up a spicy summer sip. You can follow similar ratios with your favorite spirit and pantry staple preserve!

The first time I made this simple summer sipper, was for a gender reveal party for my brother and sister-in-law. And that party is when I found out that I was going to be an aunt to a little girl - so in my family we call this Isabelle’s Lemonade. It’s delightfully refreshing and the perfect vessel for a splash (or two) of your favorite spirit.

This is one that I mixed up for the National Prosecco Week Cocktail Competition and I call it, ‘On Holiday’. It is the Prosecco Cocktail of my vacation dreams… I want to sip one as I get ready for dinner on the beach, my skin still warm from the sun and the smell of salt in the air. Last week Lauren presented an original cocktail to a team of judges from the International Bartenders Association with the hopes of representing the United States in World Cocktail Championships. She was required to use New Riff Kentucky Straight Bourbon, the Real Syrup of her choice, and limited to only 5 additional ingredients. She made 4 cocktails in the 7 minute time limit and was judged on her presentation, technique, and cocktail flavor. She proudly took home second place and is excited to share her cocktail with you! Just because the warm weather has finally arrived doesn’t mean that it’s time to put away the bourbon! Some of my favorite summer flavors pair perfectly with my go-to bourbons. And Copper & Cask Straight Bourbon, rich with baking spice, vanilla, and oak is the perfect accompaniment to this sweet peach syrup.

It’s officially Strawberry Season! I found local strawberries at the farmer’s market - beautifully bright red, plump, and bursting with juicy, fresh flavor! Whenever possible we use locally sourced in season ingredients - so these perfectly ripe berries were begging to be turned into something special. You know that we love a mix-it and forget-it recipe, so just a little bit of prep and time turns a few simple ingredients into an amazing mixer. This Strawberry Lemonade Concentrate is a great summertime staple - simply shake it with ice for an alcohol free, refreshing libation. And what a great excuse to mix up something with our Augusta TPS Small Batch Blend (or what we refer to as the Bartenders Blend, because the Merchants Team were the ones who blended it!). The Margarita is the most popular cocktail in the world - and for good reason! It’s a delish, refreshing serve that is super easy to customize! When shaking up a Marg, I want a fresh burst of agave and citrus in my margaritas - which is why I gravitate to a blanco. I love how the notes of honey and black pepper in Carrera Blanco bring a depth of flavor to my cocktails. And a simple blend of lime, agave nectar, and triple sec and you’ll soon be sipping your way through the spring and summer!

The Oaks Lily is the signature cocktail of the Kentucky Oaks, the premier race for three-year-old fillies held at Churchill Downs the day before the Kentucky Derby. Introduced to racing fans in 2005, the Lily is a vodka based blend of cranberry, candied orange peels, and lemon. It’s a light, refreshing cocktail - perfect for a hot, humid afternoon at Churchill Downs.

Korban has been mixing up a special Spring ‘75 over the last few weeks - and we love it so much it’s going on the menu! The sweet strawberry of the syrup and bitter orange of the Aperol are a few flavors that beg to be enjoyed on a patio in the sunshine! A splash of Vizon Blanco brings notes of fresh agave and pepper, topped with a healthy glug of Sparkling Rose, this is a cocktail you’re going to want to sip all spring (and summer) long!

These spirits on their own make some exceptional cocktails, but we’re building a few sips with what we lovingly describe as ‘Kitchen Scrap Cocktails’ - we wanted to find a way to give a second life to things like the tops of strawberries or used coffee grounds. Both of those items are still packed with flavor, you just need a little time and patience to turn them into a super satisfying cocktail ingredient.

With a couple of warm, sunshiny days under our belts, I find myself itching for a gin cocktail. It’s not quite the weather for a crisp, ice cold G&T. And I’ve been craving something botanical, slightly floral, with a deep rich finish. So I reached for New Riff’s Barrel Aged Gin - it’s crafted with local, wild foraged botanicals and a dash of new make rye before resting in used bourbon barrels. The vanilla and woody spice of this gin pairs beautifully with tangy blackberry and is complimented by the light citrus and floral notes of Lillet Blanc.

In a shaker, Pistachio Cream and Creme de Cacao with ice and shake for about 10 seconds. Strain into a small pitched with a pour spout. Carefully cut one ear off of the chocolate bunny. Pour cocktail into the bunny. Top cut ear with a dollop of whipped cream.
Here’s a little treat for all the adult attendees of your Easter brunch this Sunday. It’s a whimsical little riff on the flavors of Dubai Chocolate - decadent, creamy pistachio, and rich chocolate - served in a hollow Chocolate Bunny! This Pistachio Liqueuer is absolutely delicious - perfect for an after dinner treat served neat or over ice, stirred into coffee or shaken into a Chocolate Martini!

So you know we had to mix up a Grand Slam cocktail for you this week! It’s inspired by the iconic baseball game snack - Cracker Jack! It’s a rich, smooth, lightly sweet, peanutty cocktail that’s perfect for opening day and beyond. The cinnamon forward flavor of Old Bardstown Bottled in Bond beautifully compliments the caramel and nut of the cocktail. This one is a little tricky to make - but it’s worth a little extra effort to start the season off on the right foot.
Glass: Double Old Fashioned Glass Garnish: Peanuts
Add the butter to a large Mason Jar and microwave on low in 20 seconds increments until melted. Carefully pour bourbon into the melted butter. Place the lid on the jar and let sit at room temperature for 4-6 hours, occasionally shaking the jar. Place in the fridge overnight to let the butter solidify. Carefully pour butter infused bourbon through a coffee filter lined fine mesh strainer and store in the fridge until ready to use.
In a Mason Jar, combine Old Bardstown and Heath Toffee Bits. Secure the lid. Place in a pot and fill with water to the fill line of the jar. Over low heat allow the Heath to infuse into the Bourbon for 30 minutes. Remove from heat and let cool completely. Pour through a fine mesh strainer. Discard solids. Store in the fridge until ready to use.

Espresso Martinis are still one of the most popular cocktails that we serve at Mercjants Club (and they’re only $7 during Happy Hour!). But as we tiptoe into warmer weather and we firmly settle into Iced Coffee season, it’s time to shift everyone’s favorite coffee cocktail into a certified patio pounder! This riff is inspired by an Irish Coffee - but try it with your favorite spirit!

You may know Castle and Key for their Whiskey, but have you tried any of their Gins? The chamomile, citrus, and ginger of Castle and Keys Roots of Ruin Gin pairs beautifully with fruit-forward sweetness and herbaceous brightness. The gin brings herb and spice to the cocktail, while the Pear-Rosemary syrup adds a balanced pear sweetness and an aromatic rosemary note that lifts the brightness of the lemon. The lemon juice provides high acidity to sharpen the flavors and cut through the syrup’s richness, resulting in a refreshing, balanced profile with enough complexity to keep a cocktail interesting from first sip to finish.

In a cocktail shaker add all ingredients and shake without ice for 12 seconds, this is called a Dry Shake. Add ice and shake again, this is a Wet Shake, and then strain into a chilled Coupe. Carefully drop 3-5 drops of Chocolate Bitters around the edge of the glass and run a toothpick through the center.
I love a Sour style cocktail - there is something about that perfect balance of sweet and tart that keeps me going back in for one more sip. This cocktail is a blend of Cherry, Almond, and Chocolate making it sweet and rich, with just enough Lemon to keep it all in balance. The Egg White softens the bite of the Lemon, while giving the cocktail a rich, velvety texture - feel free to leave it out or try Fee Brother’s Fee Foam which is a Vegan Egg White Alternative. I’m using 1941Vodka, 100% Corn, with a crisp, clean profile that lets the flavors of this cocktail shine.

We’ve been hearing your requests to add a Chocolate Martini to our menu (keep your eyes peeled for that very soon!) but we’ve been playing around with the Bottega Pistacchio Liqueur and have fallen in love with it’s rich, decadent flavor profile. It’s delicious on its own (or in an Espresso Martini!) but we wanted to recreate the flavors of the popular Dubai Chocolate. To that yummy Pistachio we added some sweetness with Smirnoff Caramel Vodka and depth with dark chocolate. Shake one up today!

The Hurricane is part of the grand tradition of tropical and tiki drinks, pulling in rum, grenadine, passion fruit , and citrus for a deceptively sweet cocktail that packs a punch. Pat O'Brien, his business partner, and a rum salesman reportedly invented the beverage in the 1940s to make use of the affordable spirit, but origin stories are never really that simple.

I don’t know about you, but I am doing everything and anything to stay warm during this long, freezing cold stretch of winter. And this cold snap is the perfect excuse to mix up a classic Hot Toddy. The traditional recipe is tried and true - Whiskey, Lemon, Honey, and Hot Water. But it’s also a great starting point to give it a little extra pizazz. The Noteworthy Sherry Stave Finished Bourbon gives this Toddy some dark fruit, raisin, and sandalwood notes - the Ginger Syrup adds a little spice, to warm you from the inside out.

This cold snowy weather has me craving rich, warmly spiced cocktails, to sip slowly while I dream of warmer days to come. This Spiced Apple Syrup is an amazing accompaniment to Bourbon, Aged Rum, or even Anejo Tequila! When I can’t escape the cold, I like to mix up a spirit forward cocktail - something to warm me from the inside. This is classic Old Fashioned recipe, but our Syrup gives it an unexpected twist which pairs well with the sweet, nuttiness of the Copper and Cask Wheated Bourbon.

We’re still deep in Citrus Season - and this week we’ve been obsessed with grapefruit! Ripe, in season grapefruit is the most delightful blend of sweet/tart/bitter that harmonizes beautifully with almost every spirit type. But with this current cold-snap, we’re dreaming of warm summer days so we chose to base our cocktail with Bushel Organic Gin. This lemon and juniper forward gin is the perfect companion to our grapefruit syrup.

Fig season is always bittersweet - it’s a reminder that summer is coming to a close. But these sweet little treats are such a wonderful send-off to these hot, humid days. My Fig-Honey Syrup is a great sweetener for any Old Fashioned, and it would be fantastic in a Daiquiri or even a Margarita! I love a little drizzle over vanilla ice cream!

This Honey-Chamomile Syrup is absolutely delicious and super easy to make - and it has so many uses for all of my summer cocktail and sweet treat needs! It’s fantastic in lemonade or iced tea, I like drizzling a bit over waffles for breakfast or over the goat cheese on my evening charcuterie plate. It’s a fun flavorful syrup to keep on hand!

The Hurricane that I enjoyed when I was competing in New Orleans, was perfect because of where I was. But when making one for myself, I wanted more than just a super sweet, ‘fruity’ concoction. I wanted something refreshing and bursting with real fruit flavor. My syrup is a tropical blend of guava, passion fruit, blood orange juice, and strawberry. Its tartness is balanced by the sweetness of the cognac and rum. And each sip keeps you wanting more.
Combine all ingredients in a blender and pulse until fully blended. Pour through a fine mesh strainer. Store in the fridge until ready to serve.

There is something so satisfying about a pitcher of ice cold lemonade in the summer. It’s so easy to make - and easy to customize! This version features strawberries and a pop of ginger! Feel free to substitute blackberries, raspberries, blueberries, or a blend of all four to make your own perfect summer sip!

This Peach Syrup is fresh, fruity, and filled with the warm flavors of summer! I love to keep it on hand to stir into my Iced Tea or add to a French 75. If you have an Orange or Lemon on hand, add a strip of peel to bring an extra layer of flavor to this syrup. Or throw in a handful of raspberries if you like your syrups with a little tang!

Both of those items are still packed with flavor, you just need a little time and patience to turn them into a super satisfying cocktail ingredient.
