Bugey is one of the best-kept secrets of France. As a geographical crossroads between the Savoie, the Jura, Burgundy, and the Rhône, it is one of the few regions where one can see both palm trees and snow within eyeshot. This sparkling wine is produced in the "ancestral method", where the wine has been bottled partway through the fermentation, refermented in the bottle until reaching a beautiful balance of sweetness and bubbliness. Then it is racked off its lees and recorded to avoid further fermentation.
